Crab Stuffed Potatoes

5 medium Idaho potatoes
1 cup fresh crab meat or 6 1/ounces canned crab meat
8 ounces butter
½ cup light cream
1 teaspoon salt
4 teaspoons onion, grated
2 cups Cheddar cheese, grated
½ teaspoon paprika
¼ teaspoon white pepper
Recipe
Bake potatoes until tender. Cut lengthwise and scoop out pulp. Whip together potatoes, butter, cream, salt, pepper, onion and cheese. Add a little more cream if necessary. With a fork mix in crab met and refill four halved shells. (The extra potato is to ensure plenty of filling.) Sprinkle with paprika and reheat in a 400 degree F. oven for about 15 minutes. Serves 8. Note: Freezes well.
