    Creamy Cheese Potatoes

    3-5 lbs. Potatoes, boiled
    1/2 cup. Margarine
    2 10 oz. cans Cream of Mushroom Soup or Cream of Chicken Soup
    1 1/2 cups Cheddar Cheese, grated
    2 cups Sour Cream
    2 Tbs. Margarine
    1 cup Crushed Cornflakes

    Cool and then grate the potatoes and place in a very large (or 2 small) pan. Heat the 1/2 cup margarine in a pot with the two cans of soup. Add the cheddar cheese and sour cream. Mix gently. Pour over potatoes. Mix lightly with a fork. Melt the 2 Tbs. margarine in a pot and mix in the cornflakes to coat. Sprinkle over the potatoes. Bake at 350 for 45 minutes.
