    2 pound bag of bag Ore-Ida hashbrowns, thawed
    1 can cream of chicken soup
    1 cup of chopped scallions
    1 pound of sour cream
    8 ounces of grated sharp (or mild) Cheddar cheese
    Optional: 1 stick melted butter and crushed potato chips for topping

    Mix all the ingredients. Save some cheese for topping. Cover with foil and refrigerate overnight. Remove cover and bake at 375�F. for 45 minutes to 1 hour. Serves 8.
