    3 lb. medium potatoes
    2 tsp. salt
    1¼ cups milk
    ¼ cup unsalted butter
    8 oz. feta cheese
    Snipped fresh thyme

    Recipe



    Scrub the potatoes but do not peel them. Cut into quarters. Place in a large saucepan and cover with cold water. Add the salt; bring to boiling and cook, covered, for 20 to 25 minutes or until tender. Drain well and return to the saucepan.

    Mash the potatoes with their skins with a potato masher or beat with an electric mixer on low speed. Add the milk and the butter and mash or beat until nearly smooth and fluffy. Break the feta cheese into small pieces and stir into the potatoes until combined. Sprinkle with snipped fresh thyme. Makes 8 servings.

    Make-ahead tip: Transfer the potatoes to a lightly buttered 2-quart baking dish. Cover and chill up to 24 hours. Bake, covered, in a 375° oven for 45 minutes or until heated through.
