    Ham and Cheese Stuffed Potatoes

    4 large baking potatoes
    1 tsp. shortening
    6 tbsp. butter
    2 tbsp. grated onion
    1/4 tsp. pepper
    2 eggs
    1 1/2 cup shredded cheese
    1 cup diced ham

    Heat oven to 375.

    Scrub potatoes; pat dry. Rub each potato with shortening; prick several places with fork.

    Bake for about 1 hour or until done. Cut potatoes in halves lengthwise; scoop out inside, leaving a thin shell.

    In large bowl, beat potato insides 1 minute. Add butter, onion, pepper, and eggs; continue beating until mixture is smooth and fluffy. Fold in 1 cup cheese (reserve remaining cheese for topping) and ham. Fill potato shells with mixture; top with reserved cheese.

    Bake at 375 for 15 minutes or until potatoes are heated through and cheese is melted.
