    Honey -roasted Mashed Sweet Potatoes

    6 sweet potatoes (about 6 lbs. total)
    8 T. butter, cut in small pieces
    1 tsp. ground cinnamon
    1/4 tsp. grated nutmeg
    1 cup honey
    Kosher salt and ground pepper to taste

    Preheat oven to 350 degrees. Peel and quarter sweet potatoes and place into roasting pan. Place the butter pieces evenly on top of the potatoes. Sprinkle the cinnamon and nutmeg on top; drizzle with honey and season with salt and pepper. Gently pour about 2 cups of water into pan without washing anything off potatoes. Cover and bake for 1 1/2 hours or until tender.

    Remove the cover; stir and cook for 30 minutes more. (The potatoes should have a dark brown color.) Remove potatoes with a slotted spoon; place them into a large bowl and mix with electric mixer until large lumps are gone. Drizzle liquid from pan and mix until desired consistency.
