Layered Potato Bake

List of Ingredients
4 large potatoes
4 eggs
1 brown onion, thinly sliced
1 spicy sausage, thinly sliced
2 ripe tomatoes, sliced
1 or 2 baby eggplant, slice
1 cup sour cream
6 button mushrooms, sliced
3 oz tasty cheese, grated
bread crumbs
sweet Paprika
Method:
Slice potatoes and steam until almost cooked. Or boil in their jackets until just tender and cool slightly before slicing. Set aside. Hard boil eggs. Plunge into cold water immediately. Peel and slice. Set aside. Brush eggplant slices with olive oil, grill until just tender. Set aside. Brush oven proof dish (lasagne sized) with a little butter or oil, sprinkle with bread crumbs. Layer potatoes, onions, eggs, sausage, eggplant, mushrooms, cheese, tomatoes and sour cream. Sprinkle generously with cheese and finish with a light dusting of paprika. Bake in a preheated oven 350-375°F oven about 30 minutes or until top is nicely browned. Serve with a crisp green salad. Serves 4 - 6 (and is filling and satisfying).
