Mushroom Stuffed Baked Potatoes

4 large baking potatoes
3 T. butter or margarine, divided use
1 1/2 c. chopped mushrooms (1/4 pound), or 1 can (2 oz.) chopped mushrooms, drained
1/3 c. milk approx.
1/2 tsp. onion powder
salt
1/8 tsp. pepper
1/4 c. shredded sharp Cheddar cheese
Recipe
Scrub potatoes and bake in a preheated oven at 425 degrees for 55 minutes or until soft.
Cut a slice off top of each potato and carefully scoop out pulp; reserve skins. Melt 1 T. butter in small skillet, add mushrooms and saute about 5 minutes. Mash potato pulp with remaining 2 T. butter. Add milk, onion powder, salt to taste and pepper. Beat until fluffy. Stir in mushrooms, then heap mixture in potato shells.
Arrange on a baking sheet and sprinkle with cheese. Bake in 400 degree oven for 15 minutes or until golden brown.
Makes 4 servings.
