Potato Bisque

4 slices thick sliced bacon
2 T. butter
2 C. chopped onions
1 C. carrots, diced
1 C. celery, diced
6 medium red potatoes, peeled and diced
4 C. chicken stock
1-1/2 tsp. salt, or to taste
1 bay leaf
1-1/4 tsp. marjoram
1 tsp. dill seed
1 tsp. paprika
1/4 tsp. thyme
2 C. milk
1/4 C. chopped fresh parsley
salt and freshly ground pepper
Recipe
In a large (5 quart) pot, saute' bacon until barely crisp and set aside. Pour off bacon grease, reserving 2 T. in pot. Add butter.
Over medium-high heat, saute' onions, carrots, celery and potatoes until onions are transparent.
Add stock, salt, bay leaf, marjoram, dill seed, paprika and thyme. Bring to a boil and simmer about 1 hour until potatoes are tender but do not fall apart. Add milk, sauteed bacon, parsley and salt and pepper to taste. Heat thoroughly, remove bay leaf and serve.
Serves 8.
