Roasted Potatoes with Artichokes

2 pounds small red potatoes, quartered
2 cans (14-ounce each) artichoke hearts,* drained, halved
2 teaspoons dried thyme
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
2 ounces crumbled feta cheese
Recipe
Preheat oven to 425 degrees F. Grease a large baking sheet.
Combine potatoes, artichoke hearts, thyme, olive oil, salt, and pepper in a large bowl; mix well.
Spoon potato mixture into prepared pan.
Bake potato mixture for 15 minutes; stir. Bake for 15 minutes longer; stir. Bake until potatoes are tender, about 10 minutes longer.
Sprinkle feta over potato mixture; stir well. Serve immediately.
*For an Italian flavor, use marinated artichokes and the oil in which they are packed instead of the canned hearts and olive oil.
