    Scalloped Potatoes with Cheese

    Peel 6 to 8 med. to large potatoes,wash and slice thinly
    1 teaspoon salt
    1/2 teaspoon pepper
    1/2 cup margarine or butter
    4 tablespoons flour, more if needed
    1 cup of velvetta cheese cubed
    2 cups milk

    Grease casserole dish or pan. Place half the slice potatoes in dish, sprinkle salt and pepper over this. In sauce pan over med. heat add 1/2 cup butter or margarine and melt. Add 4 tablespoons flour, 1 teaspoon salt, 1/2 teaspoon pepper, and mix well. (use more flour if needed, for right consistencies.) Add 2 cups of milk, let this thicken, stir constantly. When it thickens add the cup of cheese, cook only until the cheese has melted. At this point you can add more cheese if you prefer, (My family likes the cheese taste so I add more.) When cheese is melted and smooth, pour half of the mixture over the potatoes, then add rest of sliced potatoes, then rest of the cheese sauce. Bake in 350 /o oven covered for 30 minutes, then uncover and bake another 20 minutes or until potatoes are done. servings 4 to 6.
