    4 cups instant mashed potatoes
    1 1/2 teaspoon salt
    4 cups hot water
    1 cup milk
    6 tablespoons margarine
    1 3/4 cup sour cream
    6 ounces cream cheese
    2 tablespoons margarine

    Stir potatoes, water, milk, margarine and salt in large microwaveable bowl until moistened. Cover loosely with plastic wrap and microwave for 6 to 7 minutes on high until bubbly. Blend with electric mixer until smooth. Add sour cream and softened cream cheese. Mix until again smooth. Turn into greased 10 inch casserole dish. Dot with remaining margarine and sprinkle with paprika. Bake, uncovered at 350F for 30 minutes. Best if made 1 day early and baked just before serving. Easily made into larger quantities.
