    Spinach Stuffed Potatoes

    4-5 nice sized Redskin Potatoes
    Butter
    1 Packet of frozen spinach
    American cheese slices

    Follow directions on Spinach packet. I find it faster to cook the spinach on the stove and potatos in the microwave. I usually use the potato setting, so I have forgotten how long you actually cook a potato for. *Make sure you use a fork and poke holes in the potatos so they don't explode.

    The spinach should be finished before potatos. I strain the juice and add butter to taste and set aside in a covered dish.

    When the potatos are done, cut them in half long ways. Take a spoon and scoop as much of the white of the potato out (without puncturing the skins) into the bowl with the spinach. Make sure you save the skins of the potato and keep them in tact for putting the mixture back in the leftover skin. Mix up spinach and potato and add more butter to taste.

    Take the finished mix and spoon the mixture back in each potato skin half until each skin is full. Place on a microwave safe plate and then cover each potato with a slice of cheese.

    Microwave until cheese is melted.
