Sweet Potato Crunch

3 cups sweet potatoes (peeled and boiled)
2 eggs
1 cup sugar
1 tsp. vanilla
Topping:
1 cup chopped pecans
1 stick of melted butter
1 cup of brown sugar
Recipe
Boil potatoes, drain and mash. Mix in eggs, sugar and vanilla on low speed. Place in deep-dish pie plate. Mix topping in a bowl and pour over sweet potatoes until they’re completely covered. Bake at 350 degrees for 30-35 minutes.
