Volcano Potatoes

1 1/2 lbs. baking potatoes (4 to 5 medium)
1 to 3 tbsp milk
1/2 tsp salt
1/8 tsp pepper
1/2 cup whipping cream
1/2 cup shredded Cheddar cheese

Peel and quarter potatoes. In covered saucepan cook potatoes in small amount of boiling water 20 to 25 m or until tender; drain. Mash potatoes. Gradually beat in enough of the milk to make light and fluffy. Stir in salt and pepper.
Grease 9-inch pie plate. Mound potatoes in pie plate, forming into volcano shape about 3 inches tall and 5 inches across at the base. Leave 1-inch space between potato mixture and edge of pie plate. Make a deep hole or crater in the centre of the mound.
In a small bowl whip the cream until soft peaks form; fold in cheese. Spoon cream mixture into the hole, allowing the excess to flow side. Bake, uncovered, in a 350 oven about 20 m or until golden and bubbly. Serves 5.
Watch the time in the oven - it only took my oven less than 10 m to be golden and bubbly.
