    1/2 cup of butter
    1 Small clove garlic, crushed or chopped (whichever way you like)
    1/2 cup of mushrooms (or omit if you don't like)
    1lb. Rice (approx. 2 1/4 cups)
    1/2 cup of tomatoes - crushed or grated
    (or use a 15oz. can of tomato sauce)
    1 tablespoon of salt
    1/4 cup of grated parmesan cheese
    3-5 cups of chicken bouillon cubes (bring to boil in separate pot)

    1. Melt butter in a stock pot. Add garlic and let simmer for a few minutes.

    2. Next, add the rice and mushrooms. Cook rice for 10 min. on simmer (stirring often) until it starts to brown.

    3. Add all other ingredients. Stir and bring to a boil. Cover the pot and simmer for 20-30 minutes (until tender).
    Note: if rice is under cooked it will be juicy the next time you reheat.

    4. Put rice in a big bowl, get a serving spoon and dig in!
