Portuguese Risotto With Mushrooms

4 tablespoons Oil or butter
1 Onions
2 Garlic cloves, optional
1/4 pound Mushrooms, fresh, chopped
1 1/2 cups Rice, uncooked
1 1/2 pints Chicken stock, boiling
Salt and pepper to taste
1 cup Veal, cooked, diced
1 cup Grated tasty cheese Recipe
Place oil or butter into a heavy bottomed frying pan and heat; add diced onion,crushed garlic, and the mushrooms and stalks.
As soon as the onion begins to brown add the rice and stir over the heat until it takes on a translucent look.
Add boiling stock a cup at a time, stir toprevent the rice sticking to the bottomof the pan, do not add any more until the rice has absorbed the other.
Have theheat very low and stir occasionally , the process should take approximately 45 minutes.
Season to taste, then add the meat.
Serve at once with the cheese sprinkled over the top.
