Quinoa Pilaf

1 Tbs. olive oil
1 medium onion, finely chopped
1/2 red bell pepper, finely chopped
1 clove garlic, minced
2 Tbs. pine nuts
2 cups quinoa, rinsed until the water runs clear
4 cups water or broth
Salt and ground black pepper
3 Tbs. chopped fresh flat-leaf parsley
Recipe
Heat the oil in a large nonstick skillet over medium heat. Add the onions, bell peppers, garlic, and pine nuts. Cook for 4 minutes, or until the onions are soft but not brown. Add the quinoa and cook for 1 minute.
Stir in the water. Season with salt and pepper. Bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 20 minutes, or until the quinoa is tender and the water is absorbed. Add the parsley and fluff the quinoa with a fork.
