    4 slices bacon
    1/2 cup yellow onion, chopped
    One (7-ounce) boneless, skinless chicken breast, cooked and cut into strips
    4 ounces honey mustard dressing
    5 to 6 ounces fresh spinach, cleaned and trimmed (about 3 cups)
    4 tomato wedges
    2/3 cup carrots, sliced
    1 cup red cabbage, shredded
    Sliced almonds, to garnish
    Sliced green onions, to garnish

    In a medium skillet, saute the bacon until crisp. Remove bacon, leaving the drippings in the pan. Chop into small pieces and set aside to cool.

    Saute the onions in the bacon drippings until translucent. Combine the bacon, onion, chicken breast and honey mustard dressing together in a medium bowl.

    To assemble salad, divide spinach between two plates. Top with bacon mixture. Place tomato wedges, carrots and cabbage around edges of salad. Garnish with sliced almonds and green onions.

    Makes 2 servings
