    1 bunch spinach (1/2 pound)
    1 head Boston or Bibb lettuce
    2 medium-size green onions with tops, chopped
    1 medium-size cucumber, sliced
    3 medium-size tomatoes, cut into wedges or chopped
    18 pitted whole ripe olives
    3 ounces feta cheese (about 3/4 cup), crumbled or broken into pieces
    6 stuffed grape leaves (dolmades)

    Lemon Dressing:
    1/4 cup olive oil
    2 tablespoons lemon juice
    1/2 teaspoon sugar
    1 1/2 teaspoons Dijon mustard
    1/4 teaspoon salt (optional)
    1/8 teaspoon ground black pepper

    Optional garnish: chopped parsley

    To prepare lemon dressing:

    In tightly covered jar or container, shake vigorously all dressing ingredients. Shake again before pouring over salad. To prepare salad: Remove and discard spinach stems. Rinse leaves in cool water; shake off excess water; blot dry with paper towel. Tear leaves into bite-size pieces or leave small leaves whole; place in bowl. Separate leaves from head of lettuce; rinse with cool water. Shake off excess water; blot dry. Tear leaves into bite-size pieces; add to t)owl. Add green onions, cucumber, tomatoes, olives and cheese to bowl. Pour dressing over salad ingredients; toss gently to mix and coat. Top with stuffed grape leaves. Serve immediately. Delicious served with bread sticks, pita bread and hummus. Makes 6 servings.
