Mini cherry tomatoes
Mayonnaise
Crisp bacon; broken into thin strips about 1/4 thick x about 1-1/4" long
Frilly lettuce; cut into thin strips
White bread; toasted til

Cut off about a 1/8" slice from the top of a cherry tomato. Using a small knife
or whatever implement you feel comfortable with, scoop out the seeds and the
insides of the tomatoes and turn the empty ones upside down on a few sheets of
paper toweling to drain. Break the bacon into thin strips about 1/4" thick x
about 1-1/4" long. Cut the lettuce into thin strips. Cut the toast into 4
squares, removing the crust. Using a 2/3 round cookie cutter of just cut it
freehand, make an approximate 2/3" hole in the center of each square. This is
going to hold the cherry tomato. ASSEMBLY Insert a few shreds of the lettuce
into the empty tomato shell, allowing them to stick out of the top, about 1/2".
Next add a small dollop of mayonnaise, either through a pastry bag or with a
very small spoon. Finally put 3 or 4 pieces of bacon into the tomato. The bacon
should stick out of the tomato as well. The opening of the tomato should be
fairly filled with the lettuce and bacon. The mayonnaise should be on the
bottom of the inside of the tomato and not really seen. Place each filled cherry
tomato onto one of the 'holy' toasts. I like to serve these on a platter that's
filled with curly parsley and nestle them amongst the parsley. It makes a nice
presentation. I make homemade mayonnaise, but if you aren't so inclined, a
prepared mayonnaise, like Hellmann's or Best Foods, will be just fine. Enjoy!
