    Baked Tuna Sandwiches

    1 1/2 cups flaked tuna, best quality
    1/4 cup mayonnaise
    2 tablespoons finely chopped onion
    2 tablespoons sliced stuffed garlic olives
    1 tablespoon sweet or sour pickle, diced
    2 teaspoons lemon or lime juice
    1/2 teaspoon fine sea salt
    1/4 teaspoon freshly ground white pepper
    4 French roll buns, or hamburger buns
    fresh basil leaves, if available
    1/2 cup shredded cheese of your choice

    Heat oven to 400 degrees. In small bowl, combine fish, mayonnaise, onion, olives, pickles, juice, salt and pepper. Spread mixture on bread. Top with basil leaves and cheese. Replace tops. Wrap sandwiches in foil or put into a covered pan. Bake until fish mixture is hot and cheese is melted, about 15 minutes. Serve warm.
