    Beef & Mushroom Burgers

    1 small onion, chopped
    2 cups small cup mushrooms
    1 lb. lean ground beef
    1 cup fresh whole-wheat bread crumbs
    1 tsp. dried mixed herbs, your choice
    1 Tblsp. tomato paste
    flour, for shaping
    salt & pepper to taste

    Recipe



    Place the onion & mushrooms in a food processor & process until finely chopped. Add the beef, bread crumbs, herbs, tomato paste & seasonings. Process for a few seconds, until the mixture binds together but still has some texture.

    Divide the mixture into 8 to 10 pieces, then press into burger shapes using lightly floured hands.

    Cook the burgers in a non-stick skillet, or under a hot broiler for 12 to 15 minutes, turning once, until evenly cooked.

    Serve with relish & lettuce, in burger buns or pita bread.


    Serves 4

    Note: Mixture is soft & falls apart easily, handle carefully, especially while turning. May substitute lean ground lamb for the beef.
