Black Bean Burritos

List of Ingredients
3 T. chopped onions
3 T. chopped green peppers
1 can (15 oz) black beans, rinsed and drained
4 flour tortillas (7 inches), warmed
1 C. shredded Mexican cheese blend, or Cheddar cheese
1 medium tomato chopped
1 C. shredded lettuce
salsa, optional
Recipe
In a non stick skillet coated with cooking spray, sauté onion and green pepper until tender. Add beans; heat through.
Spoon 1/2 C off center on each tortilla. Sprinkle with cheese, tomato and lettuce. Fold sides and ends over filling and roll up.
Serve with salsa, if desired.
