    1 lb. Black Beans
    1/2 Onion, diced
    1 tsp. Cumin
    2 cloves Garlic, minced
    1 tsp. Chili Powder
    1 dried Ancho or New Mexico Chile (optional)
    1/2 tsp. Oregano
    1/4 cup fresh Cilantro
    1 tsp. Lime Juice
    Tomato, red Chili, or Spinach Wrap
    1 oz. Feta Cheese
    2 oz. Salsa Cruda (recipe follows)

    Sort beans and rinse well in cold water. Fill pot with enough water to cover beans by 2 inches. Add onions, cumin, garlic, chile powder and optional chile pepper and bring to a boil. Skim any scum that rises, then lower heat to a simmer. Keep enough water on beans so they don’t dry out and cook until done at least an hour. In a food processor or food mill, process beans until coarsely pureed. Add oregano, fresh cilantro, and lime juice. If using a dried chile, remove before processing and puree separately or discard depending on your taste. Let mixture cool. Warm wrap in heavy skillet until pliable. Heat 2-3 tbsp. of bean puree in a microwave skillet and spread mixture over tortilla leaving 1/2 inch around circumference. Add shredded lettuce, feta cheese, and 1 oz. Salsa cruda or favorite salsa. Roll tortilla up and serve with fresh tropical fruits and extra salsa.

    Salsa Cruda
    1.5 tomatoes coarsely chopped
    1 tbsp. onion chopped
    1 tbsp. scallion chopped
    1/2 clove garlic minced
    1/4 tsp. Jalapeno minced
    1 tbsp. cider vinegar
    1/2 tbsp. lime juice fresh
    1.5 tbsp. lemon juice fresh
    1 tsp. cilantro minced
    1/2 tsp. parsley minced
    Lemon or lime slices for garnish

    Combine all ingredients except for garnish and refrigerate several hours or overnight, serve cold with garnish. Makes 5 servings.
