Black Bean, Tomato and Avocado Tacos

List of Ingredients
8 taco or tostada shells, perferably
trans-fat-free
1 (16 oz) can black beans, rinsed and
drained.
1 medium tomato, cored and chopped
1/2 yellow, orange, or red bell pepper,
cored, seeded and chopped
1/2 small avocado, diced
4 scallions, finely chopped
2 teaspoons chopped cilantro
1 tablesoop lime juice
2 teaspoons olive oil
1 teaspoon fajita seasoning, preferably
salt-free or reduced sodium
Recipe
1. Heat shells according to package directions; keep warm.
2. Meanwhile, combine remaiing ingredients in a medium bowl. to serve, spoon 1/4 cup of the bean mixture into/on each shell.
Makes 4 servings.
