Cheddar Cheese Red Pepper Sandwiches

1/4 cup olive oil, divided
6 red peppers, seeded and cut into thin strips
1 tablespoon lemon juice
1 loaf French bread, sliced into 1/2-inch-thick slices
8 ounces cheddar cheese, thinly sliced
Recipe
In frying pan on grill or stovetop, heat 2 table-spoons olive oil over medium heat. Sauté red peppers for 10 to 15 minutes, or until cooked well and slightly blackened. With a slotted spoon, remove red peppers to bowl.
In small bowl, combine 2 tablespoons olive oil and lemon juice. Brush portion over each bread slice. Arrange roasted red peppers and cheddar cheese on 6 bread slices. Heat on foil pan on grill or on baking sheet under broiler until bubbly and cheese melts. Sprinkle remaining lemon juice mixture over top. Serve hot.
Serving quantity: Makes 6.
