    1 medium shallot, peeled & minced
    2 Tbsp plus 1 tsp lemon juice, divided
    6 hard cooked eggs, shelled & mashed with a fork
    1 (2.25 oz) can sliced black olives, drained well
    1/2 meidum red bell pepper, seeded & minced
    1/4 cup dry roasted peanuts, finely chopped
    1/2 cup light mayonnaise
    1 small jalapeno chili, seeded & minced
    1 Tbsp plus 1 tsp minced cilantro, divided
    3 Tbsp margarine or butter, softened
    12 slices wheat read or bread of your choice
    6 lettuce leaves

    Combine the shallot and 1 Tbsp lemon juice; let sit 10 minutes
    Combine the mashed eggs, olives, bell pepper and roasted peanuts
    Combine the shallot mixture with the mayonnaise, jalapeno and 1 Tbsp cilantro
    Stir into the egg salad
    Cover and refrigerate until ready to use
    Combine the softened margarine with 1 tsp each lemon juice and cilantro
    Toast the bread and spread lightly with the seasoned margarine
    Pile the egg salad on 6 of the toast slices, top with a lettuce leaf and a second slice of bread
