1 (12 oz) can corned beef
1 C. grated American cheese
14 C. mayo
1/2 C. chopped pickles
1 T. grated onion
12 slices bread
prepared mustard
2 T. butter
2 eggs
3/4 C. undiluted evaporated milkRecipe
Mix corned beef, cheese, mayo, pickles and onion. Mixture will be very stiff
Spread bread lighty with mustard and spoon corned beef mixture evenly on 6 bread slices
Top with remaining bread slices
Melt butter in an electric frypan at 360-380 F
Beat eggs lightly in a pie plate; add evaporated milk and mix well
Dip both sides of sandwich in egg/milk mixture and brown each side 2-3 minutes in hot frypan
Cut in half diagonally and serve
