Italian Peppers, Potatoes and Sausage

1/4 cup extra-virgin olive oil
4 to 6 fully cooked sausages, split lengthwise
1 red, yellow, or green bell pepper, cut into strips
1 (10-ounce) package frozen garlic parmesan saute-ready potatoes
1 tablespoon drained capers
1 cup grape or cherry tomatoes
4 hero rolls or hot dog buns
Recipe
Cook the sausages. Heat a large skillet over medium-high heat. Coat it with some of the oil, and then fry the sausages until they're nearly brown, about 5 minutes.
Cook the vegetables. Add the bell peppers, potatoes and the seasoning mix from the potatoes to a bowl. Toss with the remaining oil; then pour into the skillet with the sausages. Cook and stir until the potatoes and peppers are brown, about 5 minutes. Add the capers and tomatoes and heat through.
Fill the sandwiches. Split the rolls and heat them on the grill or in a toaster oven. Pile the sausage mixture into rolls.
