Meat from a small lobster
hard-boiled egg yolks
1 tbl butter, melted & cooled
2 Tsp French mustard
slices fresh white bread
Recipe
Pulverize lobster in a food processor or with a mortar and
pestle. Add egg yolks and mash together. Moisten with
melted butter. Season to taaste with salt and mustard.
Remove crusts from bread and spread two slices evenly
with lobster mixture. Top with remaining bread slices. Cut
each sandwich diagonally to make four triangles. Garnish
with parsley sprigs.
