1 (6.5-ounce) package vegetable couscous
� cup slivered almonds, toasted
� cup sliced green onions
1� cup frozen salad-style precooked shrimp, thawed
6 (10-inch) flour tortillas
6 lettuce leaves or 2 cups fresh spinach leaves
6 teaspoons soy sauce
toothpicks or wooden skewers
Recipe
Prepare couscous according to package directions. Stir almonds, green onion and shrimp into prepared couscous. Mix lightly. For each wrap, arrange a layer of leaf lettuce or fresh spinach leaves on flour tortilla and top with about 1 cup of the couscous mixture. Drizzle with 1 teaspoon soy sauce. Wrap, roll and secure with a toothpick or wooden skewer. Serve chilled or at room temperature.
