Mozzarella, Pesto & Tomato Sandwich

4 thick slices country bread
1/2 cup pesto
2 medium tomatoes, sliced
4 ounces fresh mozzarella cheese, cut into small pieces
extra-virgin olive oil
salt and black pepper, to taste
Recipe
Place the bread slices on a baking sheet under the oven-broiler and toast lightly. Remove from the oven, turn over and spread each bread slice generously with pesto. Arrange 2 or 3 slices of tomato on top of each bread slice. Dot with pieces of mozzarella. Drizzle each sandwich with olive oil and season with salt and pepper.
Place the sandwiches under the oven-broiler and toast until the cheese is lightly browned, 2 to 3 minutes. Serves 4.
