Pastrami Panini

1 medium cucumber, thinly sliced
1 medium red onion, thinly sliced
1/4 cup vinegar
1 Tbsp. sugar
1/2 tsp. salt
3 to 4 Tbsp. honey mustard
2 tsp. prepared horseradish (optional)
8 slices hearty wheat or rye bread
6 oz. thinly sliced pastrami
4 oz. Swiss cheese dices
Olive oil
Purchased Thousand Island Dressing
Recipe
1. In a bowl stir together the cucumber, onion,
vinegar, sugar, and salt. Cover and chill up to
24 hours. Drain before using.
2. In a small bowl, stir together mustard and
horseradish. To assemble, spread one side of
each bread slice with the mustard mixture. Top
hall of the bread dices, mustard side up, with
pastrami, cheese, and some of the cucumber
mixture. Top with remaining bread slices. Brush
outsides of sandwiches lightly with olive oil.
3. Heat a nonstick griddle pan or large skillet
over medium heat. Wrap a brick in foil. Place
a sandwich on griddle pan or in skillet; top with
wrapped brick. Grill weighted sandwich for
3 minutes on each side or until cheese is melted.
Repeat. (Or, place sandwich on a covered
indoor of panini grill. Close lid; grill 4 to 5
minutes or until cheese is melted). Serve with
purchased dressing for dipping. Makes 4.
