    Roasted Vegetable Wrapped Sandwich

    6 cups assorted cut vegetables, such as green peppers, broccoli, carrots, mushrooms, yellow squash, onions and zucchini
    1/4 cup zesty Italian dressing
    6 mozzarella cheese slices
    6 flout tortillas (6")

    Recipe



    Pour dressing over vegetables in a large bowl; toss lightly. Spoon into a baking pan.
    Bake at 425 degrees F for 20 minutes or until the vegetables are tender, stirring occasionally.
    Layer vegetable mixture and cheese on tortillas. Place on a cookie sheet.
    Broil for 3-5 inches from heat for 2 minutes or until cheese is melted. Wrap up and serve.
    Makes 6 servings
    Preparation time: 25-30 minutes
