Shrimp Quesadillas

Preheat oven to 450 degrees
1 lb medium shrimp, cooked
1 bunch green onions, minced
1 small red pepper, minced
2 jalapeno peppers, minced (seeds removed if you're timid)
1 tablespoon fresh garlic, minced
1 1/2 cups fresh cilantro, minced
1 teaspoon cumin
Salt & cayenne pepper to taste
1 to 1 1/2 cups Monterey Jack cheese, shredded
8 flour tortillas
Salsa (optional)
Recipe
Mix all ingredients except flour tortillas together. Place filling on one tortilla then cover with a second tortilla. Place on baking sheet and bake for 3 to 5 minutes until the cheese is melted. If you like, you can spoon some of your favorite salsa or guacamole on top before serving.
Shrimp Tacos
Use the same ingredients as for quesadillas but use taco shells instead.
In the taco shells, place equal amounts of the seasoned mixture, minus the shrimp and cheese. Pour a bit of oil into a sizzling saute pan and sear the already-cooked shrimp briefly. Top the tacos with the shrimp, then the shredded cheese, and serve immediately. Top with your favorite salsa or guacamole.
