    The liquid smoke enhances this already well-seasoned sandwich filling. A quick dish for getting a meal on the table in a hurry, it may be served on warmed or toasted hamburger buns along with baked chips, pickle strips and coleslaw.


    List of Ingredients




    1 tablespoon canola oil
    3/4 cup chopped yellow onions
    3/4 cup chopped green pepper
    1 clove garlic, minced
    1 (14- to l6-ounce) block extra-firm tofu, crumbled
    1 (8-ounce) can tomato sauce
    1/2 teaspoon salt
    Dash cayenne pepper
    1/2 teaspoon ground cumin
    1 teaspoon chili powder
    1 teaspoon dried Mexican oregano or regular oregano leaves, crushed
    1 teaspoon liquid smoke

    Recipe



    Heat canola oil in 10-inch skillet. Add yellow onions, green pepper and garlic. Sauté until tender. Stir in tofu. Cook for a few minutes. Add tomato sauce, salt, cayenne pepper, cumin, chili powder, Mexican oregano and liquid smoke.

    Simmer for 10 to 15 minutes, or until thickened and flavors are blended, stirring often.


    Serving quantity: Makes 8.
