    4 bacon strips
    1/2 cup onion
    2 eggs
    2 tablespoons water
    mayonnaise
    4 slices white sandwich bread, toasted
    tomato slices
    red onion slices
    lettuce leaves

    Recipe



    Fry bacon strips in a medium-sized skillet over medium heat. Remove and drain on paper towels. Pour off all but 1 tablespoon of bacon drippings. Add the chopped onion to skillet and fry over medium heat for about 2 minutes. Beat the eggs with the water and pour over the onions. Cook for 1 to 2 minutes, turn over, sprinkle with salt and pepper and cook for 1 to 2 minutes more.

    Spread mayonnaise on the toasted slices of bread. Cut the cooked egg in half and place on the toasts. Place 2 bacon strips on each sandwich. Top with tomato, onion and lettuce leaves and cover each sandwich with the remaining toasts. Cut sandwiches in half. Serves 2.
