Sweet Potato BBQ Chicken Quesadilla

List of Ingredients
6 oz. Boneless, Skinless Chicken Breast
10î White Tortilla Shell
2 1/3 cups White Rice
1 3/4 cups Chicken Stock
2 oz. White Hominy
2 oz. Yellow Hominy
1 tbls. Chili Powder
1 tbls. Cumin
1/4 tsp. Cayenne Powder
to taste Salt & Pepper
3 oz. Goat Cheese
1/2 bunch Green Onions

Lightly season the chicken with salt & pepper and place on a grill for 6-7 minutes to mark. Brush with the BBQ sauce and cook additional 10 minutes until done. Place the chicken stock into a medium sauce pan and bring to a simmer, add the spices and salt & pepper to taste. Pour in the rice, turn sown to low simmer, cover for 30-40 minutes until liquid is gone and rice fluffs.
Assembly:
Lay out the tortilla shell and cover 1/2 with rice, cover rice with hominy and goat cheese. Fold over the top of the shell and press down, lightly brush with oil and place into the oven at 450° for 6-8 minutes. Plate the Quesadilla and grilled chicken breast, drizzle the chili/lime/caramel sauce over them and serve.
