List of Ingredients
2 ounces sliced round eggplant
2 ounces yellow squash, sliced round
2 ounces zucchini, sliced round
1 ounce red and green bell peppers, sliced
1 ounce Portabella mushrooms, sliced
1/2 ounce Fontina cheese, shredded
1/2 ounce sundried tomatoes, sliced
herb vinaigrette
1/2 herb focaccia roll
All vegetables must be marinated in herb vinaigrette and then grilled and seasoned lightly. Build the sandwich and then grill until cheese melts.
