Tomatillo Chipotle Lobster Enchilada

List of Ingredients
2 oz Olive Oil
4 oz Slipper Lobster Meat
1 Tbsp Roasted Poblano Chile Finely Diced
1 Tbsp White Onion Finely Diced
2 oz Tomatillo Chipotle Salsa
2 oz Tequila
½ oz Puréed Chipotle En Adobo
1 tsp Kosher Salt
1 tsp Fine Grind Black Pepper
¼ C Monterey Jack Cheese Recipe
1. In a hot sauté pan place the oil then the garlic, onions, poblanos, and the puréed Chipotle.
2. Deglaze the pan with the tequila. Add the remaining ingredients and cook for 2 minutes over a medium high flame.
3. Grill the tortilla, so it has x marks.
4. Place the lobster mix into the center of the grilled tortillas and roll tight.
5. Serve with Spanish rice & refried beans.
