4 bolillos or hard rolls
mayonnaise
2 teaspoons vegetable oil
1 medium onion, thinly sliced into rings
8 ounces ham, thinly sliced
Monterey jack, or pepper jack cheese, thinly sliced
hot or mild pickled pepper rings
Recipe
Slice the rolls in half. Spread mayonnaise on each half. Place the rolls on a griddle, or in a wide frying pan, mayonnaise-side down, over medium-low heat. Brown lightly, about 3 minutes. Set aside.
Heat the vegetable oil over medium-low heat on the griddle, or in the frying pan. Add the onion rings and cook, turning frequently until soft. Lay the ham slices on the onions and turn over. Continue cooking for about 3 to 5 minutes more, turning often, until the ham and onions begin to brown. Place the cheese on top, and when it begins to melt, place the filling on the bottom portions of the rolls. Top with pepper rings and carefully replace the top portions of the rolls.
Put the sandwiches back on the griddle, or in the skillet, and press down gently. Brown lightly, about 1 minute each side. Serve immediately. Serves 4.
