Ancho Chili Sauce

12 dried ancho chilies, stemmed and seeded
1 large onion, finely chopped
8 garlic cloves, finely chopped
2 tablespoons olive oil
1 cup water
Place the chilies in a food processor and grind them to a fine powder - about 15 minutes. Sieve them through a fine-meshed strainer.
Sauté the onion and garlic in the oil for 5 minutes, or until they are soft but not brown. Stir in the chilies and the water, and simmer the mixture, uncovered, for about 1 hour, or until shiny and slightly thickened.
Makes about 1 cup
