    For Halibut 'N Chips
    ½ c. all-purpose flour
    ½ c. corn starch
    ¾ c. Bass Ale
    Pinch salt
    Pinch cayenne pepper

    Whisk liquid into dry ingredients until all lumps are removed. Add more dry ingredients for a thicker crust or more liquid for a flaky crust. Heat oil to 350 degree. Dip fish into batter, then slowly submerge in oil. Allow up to 3 to 5 minutes cook time, depending on thickness of fish and cook until golden brown.

    Tartare Sauce
    1 c. mayonnaise
    2 tsp. cornichons, copped
    1 tsp. capers, chopped
    2 tsp. red onion, diced small
    1 pinch parsley, chopped
    2 drops tabasco
    ½ tsp. champagne vinegar
    1 tsp. Worchestershire
    ½ each lemon, juiced
    salt and pepper to taste

    Mix all ingredients thoroughly.
