Bordelaise Sauce

List of Ingredients
3/4 cup of butter
3 tablespoons of olive oil
1/4 cup of diced garlic
1 teaspoon of cracked black peppercorns
1/4 cup of sliced green onions
1 ounce of red Bordeaux wine
1 tablespoon of chopped pimentos
1/4 cup of chopped parsley
Salt to taste
A dash of TABASCO
In a heavy bottom sauté pan, melt the butter and olive oil over medium high heat.
Add the garlic, black peppercorns and green onions.
Saute approximately two to three minutes or until the vegetables are wilted.
Be careful not to over brown the garlic, as this will give the sauce a bitter taste.
Deglaze with red wine and add pimentos and parsley.
Season to taste using salt and TABASCO
Remove from heat.
