    3 Sweet Potatoes
    1 White Onion
    1/4 lb. Peppered Bacon
    3 cups Chicken Stock
    1/2 cup Lime Juice
    1 sm. bunch Cilantro
    4 cloves Garlic-chopped
    2 tbls. Cumin
    2 tbls. Chili Powder
    1/2 tsp. Cayenne Powder
    1 cup Brown Sugar
    to taste Salt & Pepper

    Peel and medium dice the sweet potatoes, course chop the bacon. Place the bacon into a hot, med. size sauce pan, get the bacon partly cooked and add the potatoes and onion along with the chicken stock and garlic. Simmer for around 1/2 hour or until potatoes are tender. Add the Cilantro along with the rest of the ingredients and simmer additional 10 minutes. Puree the entire mixture.

    Let this mixture simmer another 40 to 60 minutes. Skim off the bacon fat that has risen to surface. This is a sauce that will only get better with time and can stay in fridge for several days until used.
