Ed Radzvilla Buddy Steak Sauce

List of Ingredients
1/3 cup chopped shallots
3 Tablesp butter
3/4 cup plus 2 Tablesp dry white wine
1 1/2 cups Brown Sauce
1 teaspoon each of chopped tarragon and parsley
Recipe
Cook the shallots in one Tablesp butter till they are golden brown. Add 3/4 cup of the dry white wine and cook till it is reduced by half. Add the brown sauce and cook for 10 minutes. Strain through a sieve and bring to the boil. Turn off the heat and stir in the two Tablesp COLD butter. Add remaining wine and the herbs. Good on steak.
