    Fresh Ginger Relish

    1/3 cup of peeled and minced fresh ginger
    2 tablespoons of minced red sweet pepper
    2 tablespoons of cider vinegar
    2 tablespoons of orange juice
    1 to 2 teaspoons of brown sugar
    1/4 teaspoon of salt

    In a bowl combine the ginger, pepper, vinegar, orange juice, sugar, and salt. Cover and chill for several hours or overnight. Serve as a condiment for grilled or roasted meats or in place of pickle relish. Store in the refrigerator for up to 1 week. Makes 1/2 cup
