    1 large can 35 ounces) of plum tomatoes
    3 tablespoons of extra virgin olive oil
    1/2 cup of chopped onion
    1 clove garlic, whole and unpeeled
    2 - 3 tablespoons of chopped canned green chilies
    2 tablespoons of chopped fresh basil leaves
    Salt to season

    Puree the tomatoes with their juice , in a blender. Pour the puree into a heavy saucepan. Add the olive oil, onion, garlic, and cook until the mixture has thickened. Discard the garlic. Add the green chilies and basil. Season with salt. Cook for 2 minutes. Taste and adjust seasonings if necessary.
