    1 c. Butter
    7 c. Onion, large dice
    5 c. Celery, large dice
    4 c. Green pepper, large dice
    4 oz. Clam juice
    3/4 c. Cider vinegar
    3 c. Tomato juice
    1 1/2 C. Sugar
    3 1/2 Ibs. Diced tomatoes
    1 Tbsp. Garlic powder
    2 Tbsp. Salt
    2 tsp. Cayenne pepper
    1/2 Tbsp. Black pepper
    I Tbsp. White pepper
    2 Tbsp. Thyme
    1 Tbsp. Basil
    1 Tbsp. Cumin
    4 Bay leaves
    1 Tbsp. Allspice
    2 c. Cooked corn kernels cut from cob

    Recipe



    Melt butter in large sauce pan. Cook onion, celery, green pepper for 3 minutes. Add clam juice, vinegar, sugar, diced tomatoes and spices to onion mixture and cook 15 minutes stirring occasionally. Add tomato sauce and cook until reduced to sauce consistancy. Fold in cooked corn kernels and serve with smoked pork.
